What does ‘Pavon’ Mean?
Pavon is a nod to Jennifer’s ancestral name and family history in Portugal. Jennifer’s family roots are in the Azore Islands. Translated into the English word Peacock, when her family immigrated, the Pavon name is now a nod to those roots and Portuguese heritage.
Our journey began with a weekend trip to wine country that changed everything. It was a small, family-owned vineyard and winery that had previously been a farm. We met up with the friendly, owner/winemaker that led us around his barn/cellar, wine thief in hand. He would dip the thief into a barrel and pull beautiful red wine out for us to taste. Taking his time. Barrel after barrel, answering any question we may have had, as we enjoyed every sip.
From then on, we were hooked. We knew wine was in our future.
Jennifer
Jennifer was born and raised in California, where she worked in retail and direct sales management for years before changing careers as a medical office and surgery center administrator. Once she and Troy knew they wanted to make their own wine, they made the decision to move to SW Washington. Jennifer brings her experience, and her passion for wine to Pavon. Her love of meeting new people and raising a glass together is the reason for this new adventure.
Troy
Troy worked as a nuclear reactor operator in the US NAVY. When his service was completed, he wanted to use his GI bill to go back to school and was just looking for a calling. After being bit by the wine making bug he decided to enroll in UC Davis’s Viticulture and Enology graduate program. Following school, he worked in the California wine industry for 10 years before moving to Southwest Washington. His first production experience was at a winery that focused on Zinfandel, Rhone varietals, and Petite Sirah. The winemaker there was a bit of a mad scientist with oak and yeast strains. Troy brings that experience to Pavon’s Primitivo, a close relative to Zinfandel, as well as Petite Sirah production.
What Makes Pavon Wines Different?
To begin with, we will be focusing on Portuguese grapes and other lesser known varietals. Since we are located in SW Washington, we are fortunate to be able to source locally and east of the Mountains.
This gives us a wide range of options for grapes to choose from, which we happily take advantage of.
We are excited to partner with vineyards who provide us with the exceptional fruit we need in order to make distinctive wines that we are proud to put our name on.
